AL PASTOR

‘Shepard Style’ is likely a reference to the style of cooking, originally used in the Lebanese lamb dish  Shawarma, introduced into Mexico by immigrants, in the late 1800s early 1900s. These immigrants were mostly Christian Lebanese and were able to adapt to using more readily available pork to cook with the  vertical roasters; Creating what is known today as Al Pastor.

Marinating the pork in adobo sauce became popular as did  grilling with pineapple and other variations. Every region in Mexico makes Al Pastor Tacos  and have their own variations. Todo uses mostly guajillo for the adobo and marinates local pork shoulder with onions and a house blend of freshly ground spices and fresh pineapple We use a Lebanese vertical spit roaster To cook our  Pastor al Trompo.
